Just a quick post to say Happy St. Patrick’s Day and share these Guinness Cupcakes with Bailey’s Irish Cream Cheese Frosting! The credit goes to Loveswah.com. We adapted her recipe for Dark Chocolate Guinness Cake with Bailey’s Cream Cheese Icing. Read this whole post. There’s a naughty bit at the end.
Converting this cake recipe into cupcakes was a snap. It makes 24 cupcakes and you only need 1/2 the frosting recipe unless you like a LOT of frosting. If you use silicon cupcake pans bake at 350 for 20 minutes. If using a dark metal cupcake pan bake at 350 for 15 minutes. These Guinness Cupcakes with Bailey’s Irish Cream Cheese Frosting have a slightly boozy grown up flavor. If you want less of a boozy taste don’t put as much Bailey’s Irish Cream in the frosting. The cupcake tastes rich without being overly sweet. Naughty and decadent, we had them for breakfast, with some Bailey’s in our coffee. Hey, it’s St. Patrick’s Day, don’t judge.
We are going to a party tonight and each guest is supposed to share a tale, poem, or song around the fire. We wrote a number of naughty limericks. Here is the cleanest one…
There once was a girl from Budapest
Whose breasts grew out of her chest.
Well what did you expect?
Show some respect!
