Converting this cake recipe into cupcakes was a snap. It makes 24 cupcakes and you only need 1/2 the frosting recipe unless you like a LOT of frosting. If you use silicon cupcake pans bake at 350 for 20 minutes. If using a dark metal cupcake pan bake at 350 for 15 minutes. These Guinness Cupcakes with Bailey’s Irish Cream Cheese Frosting have a slightly boozy grown up flavor. If you want less of a boozy taste don’t put as much Bailey’s Irish Cream in the frosting. The cupcake tastes rich without being overly sweet. Naughty and decadent, we had them for breakfast, with some Bailey’s in our coffee. Hey, it’s St. Patrick’s Day, don’t judge.
