It is always best, especially in Italy, to think about the region where the wine comes from and the type of food that they eat there. That is always my first thought ; ) The dish looks perfect and refreshing for the summer with this Arneis.

Very interesting about the salt taxation and hiding it under fish. I love learning little historical tidbits like that. I imagine their salt smelled distinctly fishy, though. The dish and pairing sound delish!

Many of us used the Vietti and many of us paired the Arneis with pasta dishes. I like that so many also paired it with fennel and I can see how lovely those flavors would be together. Now all I have to do is find another bottle of Arneis somewhere in Michigan so I can try the fennel pairing myself.
